Recipes

Over the last few days I've gotten fourteen emails asking for recipes for various things from the boutique.  So, so I don't have to type them out anymore here they are : )

Vanilla Spiced Cider:

Straight from Heather's blog - you can get the recipe HERE!

Cranberry Meatballs:

Ingredients:
1 Costco-sized bag frozen meatballs
3 cans cranberry jelly (not chunky)
3/4 cup chili sauce
3/4 cup ketchup
3 tbsp brown sugar, packed
1 1/2 tbsp white vinegar

Directions:
Blend all sauce ingredients together on the stovetop or in a blender, pour over frozen meatballs (in a crockpot) and cook on low for 8 hours or high for 4.  SUPER easy - thanks, Stephanie for the recipe!

Mint-Infused Water with Raspberries

This is my grand creation, since all I've been craving lately is $2/bottle Metro Mint water.  This is just as good, and only pennies per serving!!

Ingredients:
water
a handful of fresh mint leaves
a handful of fresh raspberries
pure peppermint extract, to taste

Directions:
Combine all ingredients and chill!

For the boutique I bought ice cube trays and made ice cubes with an individual mint elaf and raspberry in each one, but I don't think anyone noticed, and next time I'll just throw all the ingredients in without worrying about the fancy ice cubes.  This was such a hit that I had to refill the huge pitcher three times over three hours!

Blueberry Sour Cream Cake

Ingredients:
1 (22.2-ounce) package "Twice the Blueberries" muffin and quick bread mix by Betty Crocker
1/3 cup sour cream
1/4 cup whole milk
2 large eggs (I used 1/2 cup egg beaters)
2 tablespoons vegetable oil
1/4 sugar

Directions:
1. Preheat oven to 375, spray a bundt cake an with non-stick baking spray.
2.  In a medium bowl combine muffin mix, one can of blueberrues (from muffin mix), sour cream, milk and eggs.  Mix until smooth, and bake for 30 minutes.  Cool in pan for at least 15 minutes.
3.  In a small saucepan, combine sugar and last remaining can of blueberries and cook over medium heat about 5 minutes, or until thickened.  Remove from heat and spoon glaze over cake.

Enjoy!!

Oh wow, your mint-infused water sounds fabulous, I think I may give that a try at an upcoming holiday party! Where did you find the dispenser you have it in? I have been looking for one like it and the closest I came was a Martha Stewart one at Macy's this summer for $150. It was plastic...

Hey Heather! I'm planning on making the blueberry sourcream cake for thanksgiving. I'll probably make it early in the AM and then take it over to my aunts for after dinner. Do you think the glaze will make it soggy? or should I wait to put on the glaze and just take it with me or will it hold up ok?
thanks! - Ashlee

Hi Ashlee! I'd wait to put the glaze on if I were you. Let me know how it turns out!!

ok thanks! maybe I will cook up the glaze at home and take it with us. Then just pop it in the microwave and pour it on before serving.
