Quattro Formaggi Risotto

I am very proud of myself. I made a recipe from a recipe card I got at Williams-Sonoma....Quattro Formaggi Risotto. The name alone made me almost not want to make it, but after I read the ingredient list I knew I had to. Four different types of cheese, wine and garlic? Those are three of my favorite things! It wasn't quite as difficult as I thought it would be to make. The worst part was getting all the different cheeses - I had to go to Whole Foods and Trader Joe's. Anyways, I made it and served it in my new pumpkin bowl from Harry and David and it was a big hit. I also served garlic grilled chicken, steamed mixed vegetables and asiago garlic foccacia. The dinner was quite yummy, and the risotto made a ton of leftovers. I know what I will be having for lunch tomorrow! (Sorry the picture is foggy - the risotto and veggies fogged up the camera lens.)
