Turkey Italian Meatloaf

I don't eat red meat much, but I do love to cook with turkey.  My hubby says turkey burgers and turkey meatloafs are my specialties and I have a handful of recipes for both.  Last night I decided to make up an Italian turkey meatloaf recipe with some of the ingredients I happened to have and it came out really, really good!!  {Quite possibly the best yet!}

Ingredients:

1 package (1.25 pounds) Jennie-O extra lean Italian seasoned turkey (ground)
1 cup (two 1/2 cups, actually) of your favorite spaghetti sauce
1/4 cup Italian seasonings
1/2 cup Italian-seasoned breadcrumbs
1/4 egg beaters (or one egg)
1/2 cup parmesean cheese
1/2 cup shredded extra sharp cheddar (optional)
1/2 small white onion, chopped
1/2 small red bell pepper, chopped
1 tablespoon minced garlic

Directions:
In a small pan saute onions, bellpeppers, and garlic until the onion turns completely clear.  Set aside until cooled.

In a large mixing bowl combine all ingredients except 1/2 cup of spaghetti sauce, and 1/2 cup of shredded sharp cheddar.  Form into a loaf and bake for 50 minutes at 350.  Pour your remaining 1/2 cup spaghetti sauce and 1/2 cup shredded cheese on top and cook an additional ten minutes.

Voila - it was super easy and very tasty!!  We like a lot of spices, but if you prefer a little less leave out the 1/4 of Italian seasonings.


I served it with garlic, chive and cream cheese mashed potatoes and a big salad.  Enjoy!
