Roasted Vegetable Salsa {Recipe}

Easiest, yummiest salsa ever!!

You will need:
2 large tomatoes
1 pepper (any color - I use red)
1 yellow onion
1 garlic clove
Cilantro, to taste
Salt, to taste

Cut the veggies to reasonable size, and roast on all sides over medium heat.  Make sure to leave garlic clove in the skin.
{this is round one - I do it in batches, so there's plenty of room in the pan to turn everything over.}

Then, remove the garlic from the skin and add (still hot) veggies, cilantro and salt to your food processor.


Chop to desired consitency and serve (chilled) with tortilla chips:
