Two Much-Requested Recipes

I love getting emails from you sweet blog readers! You are always so kind and encouraging, and sometimes ask me fun questions.  The biggest questions I've been getting lately are requests for the Gluten Free, Sugar Free Peanut Butter cookies I mentioned on this post, and the Sangria Blanca I mentioned in this post.  I can't take credit for either recipe, as neither of them are mine (the cookie recipe is my sister-in-law's, the sangria is my cousin's) but I will gladly share each recipe with you!

Gluten Free, Sugar Free Peanut Butter Cookies:
Ingredients:
1 egg
1/2 cup chunky peanut butter
1/2 cup sugar substitute (stevia, splenda, etc)

Directions:
Mix all ingredients.  Form into balls, and bake in a pre-heated oven for 15 minutes at 350 degrees.

Easiest cookies ever.  Imagine taking a bite of peanut butter, but with a cookie texture. Delish.  If you want this to be 100% sugar free, look for no sugar added peanut butter, or do the grind-your-own peanut butter, which is offered at most grocery stores.  A lot of peanut butters have a bit of sugar added, and it's pretty easy to find the stuff that doesn't have any added - you just have to look.


Sangria Blanca.  Watch out for this, it will sneak up on you if you're not careful.  I suggest having a designated driver when this sangria is around (which would be at all Giustino family parties.)

Ingredients:
1 cup pineapple juice
1/2 cup fresh lime juice
1 can mango nectar (such as Kern's)
1/3 cup sugar (or sugar substitute)
1 bottle Pinot Grigio wine
1 bottle Champagne
1 bottle of Safeway-brand Sparkling Key Lime Sparkling Water ( 0 Calories)
Strawberries, Mango, Pineapple

Directions:
1. Stir together juices, wine and sugar, stir until the sugar is dissolved. Add fresh fruit and refrigerate overnight.
2. Just before serving add the Champagne and Key Lime Sparkling and ice

Random note- Kern's makes me think of being a kid. My parents used to let us have it as a treat.
That's weird isn't it? I can't imagine drinking it from the can now. It's amazing in things, but straight up?
Sort of thick and ewwww...
But my parents were hippies. That is just one of the million weird things they did.
