Easy Homemade Pesto and Grilled Veggie (or chicken) Burgers {Recipe}

This is one of the easiest and yummiest meals we've had in a while, so I thought I would share!  It uses Gourmet Garden's Fresh Blends in Mediterranean, which can be found at Safeway - the herb blends are one of my new favorite products!!  Anyways, here are the recipes:


Pesto:
1 large bunch fresh basil
4 whole garlic cloves, peeled
2 - 3 tablespoons olive oil
1 - 2 tablespoons lemon juice (to taste)
salt, to taste

Directions:
Combine all ingredients in a food processor, and blend.  (Told you it was easy.)  Leftovers can be stored in a refrigerator for up to two days.

Grilled Chicken:
Two thinly sliced boneless, skinless chicken breasts
Mediterranean herb blends (about 1 tablespoon)
1 tsp olive oil

Directions:
Drizzle olive oil in the bottom of pan, add herb blends and chicken.  Cook for about five minutes on medium heat, flip and cook other side about three minutes until done.

Grilled Veggies:
{Here's what we used, but this would be yummy with whatever you have on-hand!}
Red Bell Pepepr
Eggplant
Yellow Onions
Olive Oil
Mediterranean herb blend
a few basil leaves

Combine all ingredients in pan, and cook over a medium-high heat until desired softness is achieved (I like my veggies really soft, so I cooked them about seven minutes.)



I put the grilled chicken and cooked vegetables on my burger, my husband had a veggie burger, garnished with slices of tomato, red onion and some avocado.  We put them on a ciabatta bun that we drizzled in balsamic vinegar, and then toasted in the same pan we cooked the veggies in.  Soooo yummy, and really easy!

The veggies I served on the side are also really easy, and something we can get Leila to eat every time!  I just combine a can of corn, a diced red bell pepper, the Mediterranean herbs (told you it was a favorite!) and cook it on medium heat for about ten minutes.
