Memorial Day treats!

Bakerella I am not. I'm not a big fan of cake, or baking, but I do enjoy making cupcakes! I don't get fancy, or make them from scratch (who am I to tell Betty Crocker she wasn't good enough?) but I do like to add my own ingredients, to make it feel like they're something more than straight from a box.

I like to experiment with cupcakes, and for Memorial Day I made chocolate vanilla cupcakes with a chocolate filling.


Ingredients:

*1 box french vanilla cake mix

*vegetable oil (don't remember how much - look on the cake box)

*water (same thing as the oil....)

*3 eggs

*1/2 tablespoon vanilla extract

*1 teaspoon cinnamon

*1 cup vanilla pudding


To Make:

Follow cake instructions on the box. Once box instructions are completed, add the cup of pudding, cinnamon and vanilla extract. Place in lined cupcake pan and bake according to instructions on the box.


For the filling:

*1 cup of dark chocolate frosting

*1 cup chocolate pudding

*1/4 cocoa powder

*1 teaspoon cinnamon


Mix all ingredients together until well blended.


After the cupcakes have cooled from the oven fill them with the chocolate mixture. (I placed the chocolate in a ziploc bag that had a frosting tip on the inside.) I filled through the top of the cupcakes, but will probably go through the sides next time:



Then I dyed the other frosting (cream cheese) the colors I wanted, decorated with sprinkles and a little flag: I am SO not a baking expert, but my toughest food critic seemed to approve:And then there were ther "Peanut Butter Cup Cups", as named by Tony. Tony eats pretty well most of the time, and works out like crazy but his one vice is peanut butter cups. I stole this extremely easy recipe from here (which, by the way is my new favorite blog - check it out!) and I know I'll be making again!

The "PB Cup Cups" were dug into well before dinner was served, and not a single one was left! Clearly, they were a hit.

How fun!! Those cupcakes are adorable!! How did you get the red frosting? I've used nearly an entire thing of food coloring before, and it still comes out pinkish. You are too creative!

Okay, I just looked at the recipe for the peanut butter cup cookies. YUM!! Definitely have to try that SOON.

Sheila - I used the Wilton food coloring that's in a little pot. It's a gel consistency - works MUCH better than the little drops, but you have to work a little harder to get it to mix properly.
